Garlicky Spaghetti Squash

One of the most versatile and overlooked vegetables. Serve this zesty spaghetti squash as the perfect accompaniment to nearly any cuisine – Italian, Mexican, Thai, European, or classic American.

Ingredients:

  • 1 medium-large spaghetti squash
  • Extra virgin olive oil or butter spread
  • 1 tbsp. garlic, minced
  • Salt and pepper
  • Parmesan cheese or nutritional yeast (optional)

Directions:

  1. Preheat oven to 400°.
  2. Cut squash in half lengthwise. Place on lightly greased baking sheet cut-side down. Bake for 30 minutes. Remove and cool for 5 minutes. Run fork through inside of squash to make “spaghetti.” Continue to scoop out spaghetti and set aside.
  3. Heat 2 tbsp. olive oil or butter spread over medium-high heat. Add garlic. Stir constantly to avoid burning for 1 minute. Add in squash, toss to coat with garlic mixture evenly. Sprinkle with parmesan cheese, if desired. Serve hot.
