Summer Berries Meringue

Summer means berry season – so whip together this delicious and light meringue for your next get-together!

Ingredients:

Summer Berries

  • 1 cup blueberries
  • 1 cup strawberries
  • 1 cup raspberries
  • 2 tbsp. honey

Meringue

  • 5 egg whites
  • 2 tbsp. coconut palm sugar
  • 2 tsp. white vinegar
  • ½ tsp. xantham gum (optional)

Directions:

Summer Berries

  1. Rinse and slice all of the berries.
  2. Combine the berries and honey and toss gently to coat.
  3. Spoon the berry mixture in a large baking dish.

Meringue

  1. Preheat the oven to 300°F.
  2. In a large bowl, mix the egg whites, coconut palm sugar, and xantham gum (is using). Whip until stiff peaks form.
  3. Add the white vinegar and continue to whip until just combined.
  4. Spoon the meringue over the berry mixture and bake for 40 minutes.
  5. Remove from heat and serve immediately.
