Summer Berries Meringue
Summer means berry season – so whip together this delicious and light meringue for your next get-together!Like & Share
Ingredients:
Summer Berries
- 1 cup blueberries
- 1 cup strawberries
- 1 cup raspberries
- 2 tbsp. honey
Meringue
- 5 egg whites
- 2 tbsp. coconut palm sugar
- 2 tsp. white vinegar
- ½ tsp. xantham gum (optional)
Directions:
Summer Berries
- Rinse and slice all of the berries.
- Combine the berries and honey and toss gently to coat.
- Spoon the berry mixture in a large baking dish.
Meringue
- Preheat the oven to 300°F.
- In a large bowl, mix the egg whites, coconut palm sugar, and xantham gum (is using). Whip until stiff peaks form.
- Add the white vinegar and continue to whip until just combined.
- Spoon the meringue over the berry mixture and bake for 40 minutes.
- Remove from heat and serve immediately.
