Summertime Grilled Marinated Chicken

This marinated chicken is sure to be a hit at your next barbecue, and it’s so easy to make!

Ingredients:

  • 6-8 boneless, skinless chicken breasts*
  • ½ onion, chopped
  • 4 cloves garlic, minced
  • 1½ tsp. fresh ginger, minced
  • ⅓ cup grapeseed oil
  • 4 tbsp. balsamic vinegar
  • 4 tbsp. tamari (gluten-free soy sauce)
  • 1 tbsp. brown sugar
  • ½ tsp. red pepper flakes (or more for if you like heat)
  • ½ tsp. salt
  • 1 tsp. dark sesame oil

*Or use 6-8 salmon steaks for another delicious take on this recipe!

Directions:

  1. To make the marinade, whisk together garlic, ginger, grapeseed oil, balsamic vinegar, tamari, brown sugar, red pepper flakes, salt, and sesame oil in a bowl. Add chopped onions and whisk again.
  2. Put the marinade in a large plastic zip bag. Insert chicken breasts, seal, and turn bag over several times to cover the chicken as evenly as possible. Place in refrigerator and let marinate for 5-24 hours. Turn bag occasionally.
  3. (If using salmon, be sure to lightly oil the grill so the fish does not stick during cooking!) Grill until grill marks have formed and chicken is cooked through (about 4-5 minutes per side). Remove from heat and let the chicken rest for 5 minutes to redistribute the juices before serving.
