Lemon Barley and Sugar Snap Pea Salad

Ingredients:
- 2 cups water
- 1 cup barley (quick-cooking)
- 2 cups raw sugar snap peas, julienned
- ½ cup green onion sliced
- ⅓ cup red onion, finely diced
- ½ cup Italian parsley, chopped
- 2 tbsp. olive oil
- 3 tbsp. lemon juice
- 1-2 tsp. lemon zest
- ¾ tsp. salt
- ½ tsp. pepper
Directions:
- Bring water to a boil in a saucepan. Add barley. Cover and cook over medium heat for 10-12 minutes. Turn off heat and let stand for 5 minutes. Strain and rinse barley under cold water.
- In a large bowl, mix barley, sugar snap peas, green onion, red onion, parsley, olive oil, lemon juice, lemon zest, salt, and pepper. Toss to combine. Serve chilled.
