Lemon Barley and Sugar Snap Pea Salad

A tangy vegetable dish bursting with the flavors of veggies and fresh herbs.

Ingredients:

  • 2 cups water
  • 1 cup barley (quick-cooking)
  • 2 cups raw sugar snap peas, julienned
  • ½ cup green onion sliced
  • ⅓ cup red onion, finely diced
  • ½ cup Italian parsley, chopped
  • 2 tbsp. olive oil
  • 3 tbsp. lemon juice
  • 1-2 tsp. lemon zest
  • ¾ tsp. salt
  • ½ tsp. pepper

Directions:

  1. Bring water to a boil in a saucepan. Add barley. Cover and cook over medium heat for 10-12 minutes. Turn off heat and let stand for 5 minutes. Strain and rinse barley under cold water.
  2. In a large bowl, mix barley, sugar snap peas, green onion, red onion, parsley, olive oil, lemon juice, lemon zest, salt, and pepper. Toss to combine. Serve chilled.
