Lemony Raspberry Chia Pudding
The fun pudding is fun to make and to eat, and is a great pop of color for any summer day!Like & Share
Ingredients:
- 1 cup fresh raspberries
- 1 cup plain Greek yogurt
- 1 cup coconut milk
- 3 tbsp. cup chia seeds
- 1 tbsp. fresh lemon peel
- 2 tbsp. fresh lemon juice
- 1½ tbsp.honey (optional)
Directions:
- Combine all ingredients in a large storage container (with a lid). Lightly mash in the raspberries and make sure all the chia seeds are mixed in.
- Place the lid on the container and refrigerate the mixture for at least 8 hours or overnight.
- Serve with extra raspberries and a drizzle of honey, if desired.
