Lemony Raspberry Chia Pudding

The fun pudding is fun to make and to eat, and is a great pop of color for any summer day!

Ingredients:

  • 1 cup fresh raspberries
  • 1 cup plain Greek yogurt
  • 1 cup coconut milk
  • 3 tbsp. cup chia seeds
  • 1 tbsp. fresh lemon peel
  • 2 tbsp. fresh lemon juice
  • 1½ tbsp.honey (optional)

Directions:

  1. Combine all ingredients in a large storage container (with a lid). Lightly mash in the raspberries and make sure all the chia seeds are mixed in.
  2. Place the lid on the container and refrigerate the mixture for at least 8 hours or overnight.
  3. Serve with extra raspberries and a drizzle of honey, if desired.
