Maple Dijon Brussels Sprouts

These ain’t your mama’s Brussels sprouts! Perfectly roasted Brussels sprouts perfectly balanced with fresh herbs and gently sweetened with a hint of maple syrup.

Ingredients:

  • 1 lb. Brussels sprouts
  • 1 tbsp. olive oil
  • 1 tbsp. Dijon mustard
  • 1 tbsp. 100% maple syrup or maple agave nectar
  • 1 tbsp. fresh squeezed lemon juice
  • 1 tbsp. fresh parsley, chopped
  • Pinch of salt and pepper

Directions:

  1. Heat oven to 400°.
  2. Trim outer leaves from Brussels sprouts and slice in half. Place sprouts in a medium bowl and drizzle lightly with olive oil. Toss to coat and sprinkle with salt and pepper. Roast in the oven for 20-25 minutes, stirring halfway through.
  3. Whisk Dijon mustard, maple syrup, lemon juice, parsley, salt, and pepper together.
  4. Combine Brussels sprouts with mustard sauce, toss to coat. Serve warm.
