Provençal Chickpea Salad
A beautiful, rustic side dish perfectly balanced with the herbs of France. Perfect for backyard entertaining and sure to be a dinner party hit.Like & Share
Ingredients:
- 2 cups cooked chickpeas OR 2 15-oz. cans of rinsed chickpeas
- ¾ cup red onion, minced
- ½ cup green onion, chopped
- ½ cup niçoise or kalamata olives
- 2 garlic cloves, minced finely
- Sea salt and black pepper, to taste
- ¾ cup matchstick carrots
- ½ tsp. fresh rosemary, minced finely
- 1 tsp. fresh thyme, minced finely
- 1 tsp. fresh oregano, minced finely
- 3 tbsp. fresh parsley, minced finely
- ¼ cup red wine vinegar
- 2 tbsp. extra virgin olive oil
Directions:
- Toss all ingredients in large mixing bowl.
- Refrigerate for 2-3 hours.
- Serve.
