Provençal Chickpea Salad

A beautiful, rustic side dish perfectly balanced with the herbs of France. Perfect for backyard entertaining and sure to be a dinner party hit.

Ingredients:

  • 2 cups cooked chickpeas OR 2 15-oz. cans of rinsed chickpeas
  • ¾ cup red onion, minced
  • ½ cup green onion, chopped
  • ½ cup niçoise or kalamata olives
  • 2 garlic cloves, minced finely
  • Sea salt and black pepper, to taste
  • ¾ cup matchstick carrots
  • ½ tsp. fresh rosemary, minced finely
  • 1 tsp. fresh thyme, minced finely
  • 1 tsp. fresh oregano, minced finely
  • 3 tbsp. fresh parsley, minced finely
  • ¼ cup red wine vinegar
  • 2 tbsp. extra virgin olive oil

Directions:

  1. Toss all ingredients in large mixing bowl.
  2. Refrigerate for 2-3 hours.
  3. Serve.
