Radish and Sugar Snap Pea Salad

This refreshing, crisp, and healthy salad is sure to be a crowd pleaser at your next gathering!

Ingredients:

  • 1 lb. sugar snap peas
  • 12 small radishes
  • ½ of a medium ripe avocado
  • 2 tbsp. apple cider vinegar
  • ½ tsp. Dijon mustard
  • 1 tbsp. lemon juice
  • ½ tsp. salt
  • ½ tsp. black pepper
  • ½ tsp. ground coriander
  • ¼ cup olive oil

Directions:

  1. Combine sugar snap peas and radishes in a large bowl and set aside.
  2. Combine avocado, vinegar, mustard, lemon juice, salt, pepper, and coriander in a food processor. Gradually add oil and blend until mixture is smooth. Gradually add up to ¼ cup water as needed to reach desired consistency.
  3. Toss salad with mixture and serve.
