Radish and Sugar Snap Pea Salad

Ingredients:
- 1 lb. sugar snap peas
- 12 small radishes
- ½ of a medium ripe avocado
- 2 tbsp. apple cider vinegar
- ½ tsp. Dijon mustard
- 1 tbsp. lemon juice
- ½ tsp. salt
- ½ tsp. black pepper
- ½ tsp. ground coriander
- ¼ cup olive oil
Directions:
- Combine sugar snap peas and radishes in a large bowl and set aside.
- Combine avocado, vinegar, mustard, lemon juice, salt, pepper, and coriander in a food processor. Gradually add oil and blend until mixture is smooth. Gradually add up to ¼ cup water as needed to reach desired consistency.
- Toss salad with mixture and serve.
