Watermelon, Arugula, and Feta Salad

This tasty favorite is easy to prepare for get-togethers, and the watermelon is hydrating – perfect for summer!

Ingredients:

  • 1 5-oz. package baby arugula
  • 8 cups seedless watermelon, cut into ¾-in. cubes
  • 1 cup feta cheese, crumbled
  • 2 tbsp. balsamic vinegar glaze
  • ½ cup pine nuts (optional)
  • Salt, to taste
  • Ground black pepper, to taste

Directions:

  1. If you don’t have balsamic vinegar glaze handy, make your own by boiling cup. balsamic vinegar is a small saucepan until it reduces to 3 tbsp. (6-7 minutes).
  2. Arrange arugula on large platter or in a large bowl. Scatter watermelon over arugula, then sprinkle feta crumbles over the arugula and watermelon.
  3. Drizzle with balsamic vinegar glaze and sprinkle pine nuts and salt and pepper, if desired.
