Watermelon, Arugula, and Feta Salad
This tasty favorite is easy to prepare for get-togethers, and the watermelon is hydrating – perfect for summer!Like & Share
Ingredients:
- 1 5-oz. package baby arugula
- 8 cups seedless watermelon, cut into ¾-in. cubes
- 1 cup feta cheese, crumbled
- 2 tbsp. balsamic vinegar glaze
- ½ cup pine nuts (optional)
- Salt, to taste
- Ground black pepper, to taste
Directions:
- If you don’t have balsamic vinegar glaze handy, make your own by boiling cup. balsamic vinegar is a small saucepan until it reduces to 3 tbsp. (6-7 minutes).
- Arrange arugula on large platter or in a large bowl. Scatter watermelon over arugula, then sprinkle feta crumbles over the arugula and watermelon.
- Drizzle with balsamic vinegar glaze and sprinkle pine nuts and salt and pepper, if desired.
