Better-for-You Deviled Eggs

Using low-fat Greek yogurt reduces the fat while retaining the velvety smooth texture in this popular potluck favorite!

Ingredients:

  • 12 hard-boiled eggs, peeled
  • ½ cup plus 2 tbsp. low-fat Greek yogurt
  • 2 tbsp. spring onion (or green onion), chopped
  • ¾ tsp. salt
  • 1 tbsp. Dijon mustard
  • 1 tbsp. chives, chopped
  • Paprika (optional)

Directions:

  1. With a sharp knife, halve eggs lengthwise.
  2. Place 16 yolk halves in a food processor or blender and discard the remaining eight yolks. Add yogurt and salt. Process until smooth.
  3. Transfer yolk mixture to a bowl and stir in mustard, chives, and onion.
  4. Scoop or use a piping bag to fill hollowed egg whites with yolk mixture.
  5. Sprinkle with paprika, if desired.
