Better-for-You Deviled Eggs

Using low-fat Greek yogurt reduces the fat while retaining the velvety smooth texture in this popular potluck favorite!Like & Share
Ingredients:
- 12 hard-boiled eggs, peeled
- ½ cup plus 2 tbsp. low-fat Greek yogurt
- 2 tbsp. spring onion (or green onion), chopped
- ¾ tsp. salt
- 1 tbsp. Dijon mustard
- 1 tbsp. chives, chopped
- Paprika (optional)
Directions:
- With a sharp knife, halve eggs lengthwise.
- Place 16 yolk halves in a food processor or blender and discard the remaining eight yolks. Add yogurt and salt. Process until smooth.
- Transfer yolk mixture to a bowl and stir in mustard, chives, and onion.
- Scoop or use a piping bag to fill hollowed egg whites with yolk mixture.
- Sprinkle with paprika, if desired.
