Chef Misha Hyman’s Banana, Chia Seed & Blueberry Pancakes

Ingredients: (For 2 pancakes)
- 1 banana
- 2 eggs
- 1/2 cut of blueberries (frozen or fresh)
- 3 tbsp of grass-fed butter (or coconut oil)
- 1/4 cup of chia seeds (or more depending on how fluffy you want your pancakes)
- 2 tbsp of almond butter
- organic maple syrup
Steps:
- Crush a banana in a bowl with the back of a fork.
- Crack two eggs and mix in the bowl with the banana.
- Add in 1/4 cup of chia seeds and continue to mix.
- Add in 1/2 cups of blueberries and continue mixing.
- Use a blender to mix everything into a smooth consistency.
- Place a non stick pan over a burner on medium-high and add 2 tbsp of grass fed butter.
- Add in a half of the mixture into the frying pan, cook for 2-3 minutes, and turn over for an additional 60 seconds.
- Serve hot! Add the 2 tbsp of almond butter and, if you desire, maple syrup on top.
