Grilled Artichoke with Lemon Garlic Dipping Sauce

These perfectly-seasoned grilled artichokes are great in fall and spring … ahhh, the abundance of California!

Ingredients:

  • 4 large artichokes, leaves closed
  • Extra virgin olive oil
  • 1 lemon
  • 1 tsp. Greek seasoning
  • Salt and pepper
  • 2 tbsp. lemon juice
  • ½ tsp. lemon zest
  • ¾ tsp. garlic
  • 2 tbsp. fresh parsley, chopped
  • ⅓ cup extra virgin olive oil

Directions:

  1. Whisk lemon juice, lemon zest, garlic, parsley, and olive oil in small bowl. Set aside.
  2. Cut and remove stem and tops from artichokes. Use kitchen shears to snip away the tip of each leaf. Rinse and clean dirt/debris from each artichoke.
  3. Squeeze juice from one lemon into large dutch oven. Place artichokes side by side in dutch oven. Bring to a boil. Lower heat to a simmer. Cook for 25-30 minutes or until a middle leaf is easily removed. Remove artichokes from water and set aside until cool enough to handle.
  4. Lightly brush olive oil over inside and outside of artichoke. Season with salt, pepper, and Greek seasoning. Grill over medium-high heat for 4 minutes per side. Serve with dipping sauce.
