Grilled Artichoke with Lemon Garlic Dipping Sauce

Ingredients:
- 4 large artichokes, leaves closed
- Extra virgin olive oil
- 1 lemon
- 1 tsp. Greek seasoning
- Salt and pepper
- 2 tbsp. lemon juice
- ½ tsp. lemon zest
- ¾ tsp. garlic
- 2 tbsp. fresh parsley, chopped
- ⅓ cup extra virgin olive oil
Directions:
- Whisk lemon juice, lemon zest, garlic, parsley, and olive oil in small bowl. Set aside.
- Cut and remove stem and tops from artichokes. Use kitchen shears to snip away the tip of each leaf. Rinse and clean dirt/debris from each artichoke.
- Squeeze juice from one lemon into large dutch oven. Place artichokes side by side in dutch oven. Bring to a boil. Lower heat to a simmer. Cook for 25-30 minutes or until a middle leaf is easily removed. Remove artichokes from water and set aside until cool enough to handle.
- Lightly brush olive oil over inside and outside of artichoke. Season with salt, pepper, and Greek seasoning. Grill over medium-high heat for 4 minutes per side. Serve with dipping sauce.
