Rustic Baked Apples
A gluten-free version of an All-American Classic – a super healthy and fun dessert!Like & Share
Ingredients:
- 5 medium Granny Smith apples
- ⅔ cup whole rolled oats
- ¼ cup flax seed meal
- ⅓ cup Scottish oats
- ½ cup vegan butter
- 1½ tsp. cinnamon
- 1 tsp. Truvia
- ¼ tsp. sea salt
- ¼ cup golden raisins
- ¼ cup pecans, chopped
Directions:
- Preheat oven to 400°. In a medium mixing bowl add rolled oats, flax seed meal, Scottish oats, cinnamon, Truvia, and salt. Stir to mix well.
- Add unmelted vegan butter and mix until entire oat mixture is coated. Stir in raisins and pecans.
- Core apples with melon scooper, leaving ½ in. to ¾ in. of apple at the bottom. Fill with oat mixture. Place in lightly greased baking pan. Bake at 400° for 25-30 minutes.
