Rustic Baked Apples

A gluten-free version of an All-American Classic – a super healthy and fun dessert!

Ingredients:

  • 5 medium Granny Smith apples
  • ⅔ cup whole rolled oats
  • ¼ cup flax seed meal
  • ⅓ cup Scottish oats
  • ½ cup vegan butter
  • 1½ tsp. cinnamon
  • 1 tsp. Truvia
  • ¼ tsp. sea salt
  • ¼ cup golden raisins
  • ¼ cup pecans, chopped

Directions:

  1. Preheat oven to 400°. In a medium mixing bowl add rolled oats, flax seed meal, Scottish oats, cinnamon, Truvia, and salt. Stir to mix well.
  2. Add unmelted vegan butter and mix until entire oat mixture is coated. Stir in raisins and pecans.
  3. Core apples with melon scooper, leaving ½ in. to ¾ in. of apple at the bottom. Fill with oat mixture. Place in lightly greased baking pan. Bake at 400° for 25-30 minutes.
