Soy Sesame Kale

Kale is made a little salty and a little sweet – just right for a delicious yet healthy snack!

Ingredients:

  • 4 garlic cloves, minced
  • 3 tbsp. mirin (sweet rice wine)
  • 3 tbsp. tamari (gluten-free soy sauce)
  • 1 tbsp. dark sesame oil
  • 1 tbsp. rice vinegar
  • 1½ lbs. dinosaur kale, trimmed and cut into 2-in. pieces
  • Cooking spray

Directions:

  1. Combine garlic, mirin, tamari, sesame oil, and rice vinegar in a large bowl. Stir with a whisk.
  2. Add kale to the mixture and toss to coat evenly.
  3. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray.
  4. Add half of kale mixture to pan and sauté until kale wilts and is tender (about 4 minutes). Transfer to a bowl.
  5. Repeat Step 4 with remaining kale mixture.

Servings: 8
