Vegetarian Sweet Red Onion Soup

The deep, rich flavors of French onion soup without the beef! This sweet, buttery soup will be loved by all.

Ingredients:

  • 2 lbs. red onions, sliced vertically
  • 5 garlic cloves, sliced
  • 2 tbsp. butter substitute
  • 2 tsp. brown rice flour
  • ½ cup white wine
  • 2 tbsp. balsamic vinegar
  • 5 cups vegetable broth
  • 2 bay leaves
  • ¾ tsp. dried thyme
  • Salt and ground black pepper to taste
  • Grated Gruyère cheese (optional)
  • Olive oil

Directions:

  1. Heat oil in large, deep sauté pan. Add onions and cook over medium heat for 5 minutes. Take care not to burn. Add garlic and stir frequently to allow both onions and garlic to soften for an additional 5 minutes. Do not caramelize.
  2. Sprinkle onions with rice flour and stir until well-blended. Remove pan from heat. Add wine and balsamic vinegar. Place back over heat. Stir to blend.
  3. Slowly add vegetable broth, bay leaves, thyme, salt, and pepper. Cook over medium-low heat for 20 minutes. Can serve alone or with optional grated Gruyère cheese.
