Vegetarian Sweet Red Onion Soup

Ingredients:
- 2 lbs. red onions, sliced vertically
- 5 garlic cloves, sliced
- 2 tbsp. butter substitute
- 2 tsp. brown rice flour
- ½ cup white wine
- 2 tbsp. balsamic vinegar
- 5 cups vegetable broth
- 2 bay leaves
- ¾ tsp. dried thyme
- Salt and ground black pepper to taste
- Grated Gruyère cheese (optional)
- Olive oil
Directions:
- Heat oil in large, deep sauté pan. Add onions and cook over medium heat for 5 minutes. Take care not to burn. Add garlic and stir frequently to allow both onions and garlic to soften for an additional 5 minutes. Do not caramelize.
- Sprinkle onions with rice flour and stir until well-blended. Remove pan from heat. Add wine and balsamic vinegar. Place back over heat. Stir to blend.
- Slowly add vegetable broth, bay leaves, thyme, salt, and pepper. Cook over medium-low heat for 20 minutes. Can serve alone or with optional grated Gruyère cheese.
